Bistrotheque
Established in 2004 by Pablo Flack and David Waddington, Bistrotheque is a restaurant, bar and cabaret space based in London’s Bethnal Green. Under Head Chef Tom Collins, the kitchen prepares a menu inspired by classic French Bistro dishes. Bistrotheque pioneered the “pop-up” and “temporary” restaurant concepts that have since been emulated across the world with The Reindeer, a pop-up restaurant and theatre above a car park on Brick Lane open for 23 days before Christmas in 2006.
Flash, held in the Burlington Room of the Royal Academy of Arts, was a room-within-a-room, installation-in-an-exhibition temporary restaurant that set the standard for mobile cooking events. Offering diners a new Californian take on Tom Collin’s modern French style, the restaurant was as much a hit for dinner as it was for its innovative cream teas.
Pablo, David and Tom continue to open temporary restaurants, events and dining concepts, alongside the ever-popular permanent restaurant Bistrotheque.
